My quest to elevate Philippine coffee led me to Wilton Benitez in Colombia, one of the most innovative minds in coffee. I spent two weeks on his farm, undergoing advanced training in coffee farming, processing, and fermentation techniques. Wilton was generous enough to share his extensive knowledge freely, with the hope that we can bring these advanced techniques to the Philippines. By doing so, we aim to improve the lives of our local coffee farmers by adding more value to Philippine coffee.

We cupped his coffees daily at the farm, and I was so impressed with their quality that I knew it was essential to make them available and accessible here in the Philippines. It's important for our coffee community to experience, enjoy, and appreciate the exceptional craftsmanship that goes into these unique coffees. By bringing Wilton's coffees to the Philippines, we hope to inspire a deeper understanding of the possibilities within coffee production, while also supporting and uplifting our local coffee industry.

Whether you are a seasoned coffee enthusiast or exploring specialty coffee for the first time, these offerings will provide a remarkable experience that showcases the art and science behind Wilton Benitez’s innovative processes.

For the best experience, we recommend consuming the coffee 15 to 30 days after the roast date. This window allows the beans to reach optimal flavor development, ensuring that you enjoy the full complexity and richness of the coffee at its peak.

If the coffee reaches 45-50 days after roasting, we suggest portioning the beans into 15-20 gram servings and storing them in a cool, dry container in the freezer at -5°C to -10°C. This will help preserve the coffee’s freshness and extend its shelf life, ensuring you can continue to enjoy its remarkable flavors.
