In a fast-paced and busy world, it's always nice to take a few moments and enjoy the beautiful things life offers.
With the use of Koji (Aspergillus oryzae), we were able to break down the starches present in the excelsa cherries and convert them into sugars which contribute to new flavors. This method harnesses the microclimate of Santa Marina in elevating the sweet and fruity flavors of excelsa.
Coffee is a slow, meticulous process, so once in a while, let's pause and reflect on the hard work of the people who made this coffee and its long journey to your cup.
