Prodigal Coffee, Bella Vista - Colombia, washed

Our newest menu addition is Bella Vista, a lovely washed Colombian from southern Tolima. Over dozens of tastings we consistently picked out this coffee for its peach and orange, hint of berries, and winey acidity.

For this coffee, only ripe cherries were picked and then sorted by density. Whole cherry was kept in tanks for 36 hours, then depulped and fermented another 48 hours. After final washing, the coffee was dried on ventilated roofs for up to 21 days.
